  • Title The characteristics of the manufacturing method and the attempt to expand the use of long life tofu products

    Summary Tofu was legally required to be sold in cold conditions for a long time, but the law was revised in 2018. Following that revision, we launched long life tofu products nationwide which can be stored at room temperature in the home delivery market on January in 2019. In this review, I introduced the differences compared with traditional tofu including the manufacturing method and packaging.
